Generally, a high model is slightly heavier due to the extra material around the ankle. However, due to modern techniques and the use of composite (plastic) safety toes and Kevlar midsoles, today's high women's models are surprisingly lightweight and flexible.
Do you work a lot outdoors, in damp conditions, or on rough terrain? Then S3 (water-repellent and anti-perforation) is the best choice. Do you mainly work indoors in a dry warehouse? Then an S1P shoe may be sufficient; it often ventilates better but is not water-repellent.
In general, you can stick to your regular shoe size. However, since work shoes have a hard toe that doesn't stretch, it's essential that your toes don't touch the front. If you're unsure between two sizes, or if you're wearing thick work socks, we often recommend trying the larger size or using insoles.
